This is a vegan cookbook containing no animal products. Included are over 300 recipes most easily prepared in 30 minutes or less, excluding bean cooking. Investigate the chapters on vegetable protein, meal planning, substitutions and how to convert your favorite recipes.
There is a chapter on meatless burgers and many bean and grain dishes. Tasty holiday meals are included along with family favorites. The book is aimed to allow freedom to create your own delicious meatless meals. Even a space for your own recipes.

One of my favorites: COLD SESAME NOODLES
1 C chunky peanut butter
1/2 C soy sauce
6 Tbsp dark sesame oil
1/4 C rice vinegar
2 tsp chili paste with garlic
1/2 C hot water
1 lb spaghetti, rice noodles or soba noodles
3/4 C chopped green onions
Chopped roasted peanuts as garnish

Combine 1st 6 ingredients and mix well. Cook pasta according to directions on pkg.
Mix sauce and pasta and garnish with onions and chopped peanuts. Serve at room temperature. I often take this to pot lucks.
